SAMBAR RECIPE

Sambar is one dish that is always loved by one and all. Just one vegetable like spinach, red amaranth leaves, shallots, drumsticks, okra, tomatoes etc is enough to make the sambar standout. This mullangi sambar also falls in this category where the sambar is made mainly with just one vegetable. Radish lends its unique aroma and taste to this sambar it is also a healthy and comforting meal when paired with steamed rice.

SAMBAR INGREDIENTS:

For pressure cooking:

  • 1 cup toor dal / arhar dal / split pigeon pea
  • 4 cups water
  • 0.5 tsp turmeric powder / haldi
  • 2 cup radish / mooli / mulangi (chopped)
  • 10-12 pieces drumstick
  • 1 cup carrot (chopped)

 

Other ingredients:

  • 2 cup tamarind juice
  • 2 green chilli. Slit lengthwise
  • 1.5 tomato (finely chopped)
  • Few curry leaves
  • 1 tsp turmeric powder / haldi
  • 1.5 tsp jaggery
  • 1 onion (cubed)
  • Salt to taste
  • 1/2 tbsp Sharabeshwara Foods Sambar Powder

 

For tempering:

  • 4 tbsp coconut oil / cooking oil
  • 1.5 tsp mustard seeds / rai
  • pinch of hing / asafoetida
  • 4 dried red chilli
  • few curry leaves

STEP BY STEP INSTRUCTIONS:

Pressure cooking dal and vegetables recipe:

  • Firstly in a pressure cooker take half cup washed toor dal.
  • Furthermore add 2 cups of water. or water as required to cook dal.
  • Also add turmeric powder.
  • Then place a small bowl into a pressure cooker.
  • Add veggies (radish, carrot, drumstick) or vegetables of your choice into  the bowl. Do not add any water.
  • Then cover the cooker and pressure cook for 5 whistles on medium flame.
  • Finally, once the pressure releases, take off the cooked vegetables and mash dal well.

 

Mix veg sambar recipe:

  • Firstly, in a large kadai squeeze 1 cup of tamarind juice.
  • Furthermore, add chilli, tomatoes, curry leaves and turmeric powder and jaggery.
  • Then get the tamarind water to boil.
  • Further add onions and salt.
  • Mix well and boil for 5 minutes.
  • Then add cooked vegetables and get to a boil again. do not over cook as vegetables are already cooked.
  • Next, add mashed dal and give a good mix.
  • Get the sambar to boil. do not over boil after adding dal as it results to indigestion.
  • Then add  1/2 tablespoon  Sharabeshwara Foods Sambar Powder and give a quick mix. Else the sambar powder will form lumps.
  • Boil for a minute and switch off the stove.

 

For the tempering:

  • Prepare the tempering by heating  4 tbsp  oil in a small kadai.
  • Further add mustard seeds, hing, red chilli and curry leaves.
  • Once they splutter, pour immediately into the sambar.
  • Finally, give a good mix to vegetable sambar and serve with hot steamed rice.

 

 

 

INSTRUCTIONS FOR PRESERVING

  • Store in an airtight container.
  • Use dry spoon to use the contents of the jar.
  • Half tablespoon is enough for 5 people, concentration might be affected since it might be too strong if used in a greater quantity.
